It’s Party Weekend

If some of my student friends are still busy cramming up for the exams, while others are also busy checking out Ferrari parts for a contest, here at my woods will be busy partying. I will be attending a total of 3 gatherings beginning Saturday evening! It’s the season of festivities you know – so sharing the spirit of love with love ones and family will not go on until the Holiday season be over.

I am not really fun of soup but i just can’t say no to this. This was really nicely cooked.

With my officemates, we answered a dinner invitation. Pastor Ravelo had a small group lecture/session/training to some nursing dept faculty then they had dinner afterwards. We were not invited to the meeting but we were invited for dinner. The food was so much that the next week i had an allergy. I was told not to eat chicken but the fried chicken was so tempting – so i was tempted. :)

Thanks Mommy E for minding the misspelled word. lol! soap ba jud!  I don’t eat soap ya know. hahaha…this is me. i laugh over at my mistakes especially the ones that are easy to spell. :D

Farmer’s Delight

Weeks ago, we celebrated the 15th founding anniversary of the college so there were too much meat dishes.  We had a banquet Sunday evening and we have to eat left overs the next day.  So that Tuesday, we can’t afford to eat any single meat dish again so we had this -

Soy Pulp Patty

Are you fun of drinking soya milk?  Do you make your own soya milk? If so, then don’t throw your pulp away.  If you are just buying your soya milk from healthy food  shops then inquire where you can avail of some soy pulp.  Our hospital is known for its healthy food products and soya milk is one of them.   Last week i bought some pulp for some cooking at home.  I made some into vege balls for a misua soup and i also made it into a patty.  The kids here at home love it!

I am trying my very best to cook something healthy because i don’t want to add more unwanted weight to myself.  I want to practice eating just the right food at the same time do Kettlebell exercise to lose my extra pounds.    Soon i will start walking and i hope i will stick to my goal.

That patty is really yummy.

Ingredients:

soy pulp
flour
salt
eggs
black pepper

optional:

food flavor powder(maybe chicken coating powder)
shredded carrots

Tinolang Fried Fish

Ingredients:

3 pcs fried fish (small size is fine)
sliced ginger
sliced onions
cubes tomatoes
camote tops

Boil the water with ginger and tomatoes.  Add in the fried fish with the onions once the water boils.  Add salt to taste.  Cover until it boils then add the camote tops.  Let it simmer.  Then serve hot.

Sounds nice for a hearty lunch.   But i look forward to a romantic breakfast in bed when i go to a holiday get away in a San Diego hotel.  So I should not stop dreaming about my American dream.

Ginataan Recipe

We had this treat Thursday and Friday of the holy week.   Some are asking how did we cook this, so let me try to enumerate here the ingredients and the how to:

INGREDIENTS:

::sticky rice (according to how many people will eat)
::half kilo sugar (brown)
:: grated coconut

::banana (diced)
::sweet potato (diced)
::taro (diced – small size)
::jackfruit (strips)
::sago (colored or non-colored will do)
::ube (optional) (diced)

Steps in cooking:

1.   Put  2 cups of warm water in the grated coconut and press.  Set aside the milk.  (do it 2 times)  The second washing, put in 4 cups.  Set aside the second washing.

2.  Put the grains of sticky rice (or you can use the powdered sticky rice) with the local ingredient called “landang”  into a big kettle.  Put enough water to cook it.  Boil.

3.  After some 20 minutes, put in the coconut milk (the first wash) with the sugar, taro, sweet potato, and the colorless sago.  Stir constantly.  Let it boil again.

4.  When the sticky rice is fully cooked, add in the banana,  jackfruit and the colored sago.  Put in the second wash of coconut milk.  Let it boil with constant stirring.  Add sugar if needed.

5.  Remove the kettle from fire when all the later ingredients are cooked.

6.  Serve in a regular size  serving bowl.

Ginataan is great merienda for young and old. :)

Coconut Burger

I already knew about vege burger or any meat substitute as a burger, but i never heard about coconut burger.  This afternoon, i come across a book entitlled “Livelihood Made Simple” by Dr. Indrasena P.  Wijeneyake and read ‘COCONUT BURGER”.  I then read through and found out that it is very easy to follow.  So am gonna try this on Saturday. :D

If you wanna try it yourself, then here is the what to and how to:

Ingredients:

2 cups coconut grated meat (sapal)
1/2 cup flour
1 teaspoon salt
5 teaspoons soy sauce
1 piece egg
1 teaspoon cornstarch
1/2 teaspoon vetsin (MSG) – optional
Tomatoes
Cheese – optional

Procedure:

1.  Steam the grated meat for 10-15 minutes.
2.  Mix with the other ingredients except for the last two.
3.  Form into patties and fry.
4.  Serve in hamburger bread, garnished with fresh, sliced tomatoes and cheese.
