Double Murdered Eggplant

I’d like to share with you one of my favorite eggplant recipes.  I love this on weekends when the eggplants are cheap in the market. 1.  Sliced the eggplants thin enough and then fry.

1. slice the eggplant thinly

2. slice and then set aside

After frying, heat some oil and put in onion and garlic.  Diced tomatoes is a plus but it is okey if there is none.

– diced ripe tomatoes -

Ripe ones are the best as they are juicy.

After they are cooked, add in the fried eggplant.  Then let it simmer.  Then add ketchup or tomato sauce and then season to taste.

Add in the chopped cheese

This is the yummy double-murdered-eggplant topped with cheese.

Next time am gonna do this, i will buy the cheese that is already ready for spreading on the recipe.

FTF & FF – Squash Delight

I love squash and there are also others who don’t.  For FTF and FF this week, let me share with you a recipe which i think even those who don’t love to eat squash, can have a taste of this heavenly yellow food.

All you need to have is squash, a little flour, 2 pcs eggs (beaten), and oil for dip frying.

1. Slice the squash thinly (but not so thin)

2.  Powder the sliced squash with flour and then dip in beaten eggs.

3.  Deep fry.

Then prepare your plate or a container covered with an absorber.  I used disposable table napkin to absorb the oil:

4.  Cooked and drained.

And now here is the FINISHED PRODUCT. Ready to be eaten:

My friends and i had this for dinner one evening last week. =)

Weekend Eating # 3

I missed my number 3 entry last week so I am sharing it this week. I mentioned in my previous post that I was in Bangkok last weekend but our food were Chinese if not Japanese inspired. Saturday food was vegetarian pinoy na pinoy but on Sunday dinner, I had this:
